RISK MINIMIZATION IN THE LOGISTICS MANAGEMENT SYSTEM OF THE HOTEL AND RESTAURANT BUSINESS
Abstract
The article examines theoretical and practical aspects of risk minimization in the logistics management system of the hotel and restaurant business processes. The main types of risks arising in the supply chains of hospitality enterprises have been systematized: supply, transport, warehouse, operational, and reputational. An author's approach to the classification of logistics risks, taking into account the specific characteristics of the industry, has been substantiated. A comprehensive risk management mechanism has been proposed, including their identification, assessment, monitoring, and neutralization. A risk matrix has been developed for hotel and restaurant enterprises, enabling their ranking by the probability of occurrence and the magnitude of potential losses. A mechanism for minimizing risks for enterprises in the hotel and restaurant sector has been disclosed, which includes: cold chain control, incoming flow management, and warehouse accounting automation. Key risk minimization tools have been identified: supplier diversification, safety stock formation, digitalization of logistics processes, and the use of blockchain technologies for food quality tracking. An example of conducting an FMEA analysis, which is adapted to modern conditions for enterprises in the hotel and restaurant sector, is given. The feasibility of using a hybrid strategy model for enterprises in the hotel and restaurant sector is determined. To this end, a comparison of strategies for enterprises in the hotel and restaurant sector was conducted: Just-in-Time (JIT) vs Just-in-Case (JIC). It has been determined that systematic minimization of logistics risks in HoReCa is possible only with the synthesis of digital control technologies, flexible anti-crisis planning, and orientation to local resources. This ensures not only the physical survival of the business in times of crisis, but also creates the foundation for its long-term competitiveness. The practical value of the research lies in the possibility of using the proposed recommendations to improve the efficiency of logistics management of hospitality industry enterprises under conditions of uncertainty and wartime.
